Zucchini on the Rocks

A delightful mocktail using zucchini from your garden

Equipment

  • 2 glasses (eight to ten ounces each)
  • small mesh strainer
  • spoon for stirring, knife for cutting the lemon or lime

Ingredients
  

  • 4 to 6 ounces fresh zucchini juice*
  • 4 to 6 ounces Brighter tonic, lemon-lime**
  • 1 T fresh lemon or lime juice, organic if possible.
  • 1 tsp maple syrup, organic if possible***
  • 2 cups ice
  • 2 sprigs basil leaves for garnish

Instructions
 

  • Pour the zucchini juice through a mesh strainer to remove any pulp.
  • Add an equal amount of Brighter tonic. Add the lemon or lime juice and stir.
  • Add 1 tsp of maple syrup and stir.
  • Fill the glasses with a handful of ice cubes.
  • Pour an equal amount of the mix into each glass.
  • Add basil garnish and a slice of lemon or lime if desired.

Notes

*Use either the juice you reserved from making the zucchini patties recipe or from juicing 2 medium zucchinis.
**I highly recommend using Brighter tonic, but if you're out, you can substitute either lemon-lime or ginger kombucha.
***If you are watching your sugar grams, this will add only about 2 more grams per serving. Feel free to omit it if you need to. Or if you have a sweet tooth, add a little more (*wink*)
This is a great recipe to take advantage of all that extra zucchini you have from your garden.  If you don't have any, feel free to purchase it from the store or borrow it from your neighbor's garden :)
